Easy Pancake Mix Banana Bread 🍌🍞

 Chocolate chip walnut banana bread!🍞 

Made with fat free Greek yogurt! 

gluten free / low sugar / paleo approved

Ingredients:  

1.5 cups paleo baking mix (I used birch bender pancake/waffle mix) alternatively, 1/4 cup coconut flour + 1 cup almond flour OR 1.5 gf all purpose flour 

2 eggs

1/2 cup Greek yogurt

3 ripe bananas

1/3 cup stevia

3 tbsp maple syrup

2 tbsp Mac oil

1/4 cup choc chip

1/4 cup walnuts

Pinch of sea salt + cinnamon

1 tbsp Vanilla extract

Optional: sprinkle oats or walnuts with cinnamon on top of bread before baking

 

Directions

Mash bananas until puréed

Mix all ingredients in a large mixing bowl until smooth then sprinkle in choc chips and walnuts. 

Grease a loaf pan with avocado oil or coconut oil spray. 

Fold batter into the pan 

Bake at 375 for 30-40 min
