Easy No Bake Paleo “Tagalong” Cookies!

Have you ever seen the ingredient label of Girl Scout cookies? Yikes. they are cheaply produced with the second ingredient being peanut butter containing corn syrup, and palm oil . (red flag # 1)  You can not replicate this exact recipe at home because... #1 why on earth would you want to do that to yourself? #2 Where can you purchase all those ingredients? But still, we continue to buy them and support our local girl scouts when the time comes around. For me, I rather just donate money, toss these boxed cookies in the trash, and make my own version! 

So I decided to make an easy no bake copy cat version that has subs to make them 100% vegan or paleo (remember paleo doesn't approve peanut butter because it is actually a legume)

They are protein packed, gluten free, and equally delicious... except they are GUILT FREE! 

Some tips when shopping for these ingredients: 

Nut butters: Always shop for an all natural nut butter that has 1 single ingredient (maybe 2 if salted or combined with another nut) but Never buy a nut butter that has added oils, sugar, or corn syrup) 

Liquid Sweeteners: your choice here! Some that work well and are in most supermarkets are pure maple syrup, honey, agave, or coconut nectar. Low calorie options are harder to find but I have seen liquid monk fruit sweetener or you can order fiber yum syrup off of amazon. (...you kinda just have to pick your poison here...)

Dark Chocolate: I shop for an organic, fair trade chocolate that is at least 70% dark and unsweetened. Also another label you have to

check for vegetable oils and added sugars. 

Flours: 

Not all coconut flour and almond flours are the same. So more/less may have to be added to the recipe.

ONLY 7 INGREDIENTS NEEDED: 

  1. GRASSFED BUTTER/GHEE OR VEGAN BUTTER SPREAD 

  2. COCONUT FLOUR 

  3. ALMOND FLOUR

  4. VANILLA EXTRACT

  5. ALL NATURAL NUT BUTTER/TAHINI

  6. DARK CHOCOLATE

  7. UNREFINED COCONUT OIL  

OK, HERE COMES THE RECIPE: 

Bottom layer: 

  • 2 tbsp Grass fed butter or ghee or Vegan butter spread 

  • 1/4 cup Coconut flour 

  • 1/2 cup Almond flour  

  • 1 scoop Nutra Bio PB Cup Whey Protein OR Vegan Sub: Nutra Bio Organic Plant Based Chocolate Protein (use promo code "Martine10")

  • 1/4 Liquid sweetener: I used coconut nectar 

  • 1 tsp Sea salt 

  • 1.5 tsp Vanilla extract 

  • Splash of almond milk if needed 

Notes: Mixture should be crumble but able to stick together when you press or roll down into the pan

Peanut butter layer: 

  • 1 cup All natural peanut butter (I mixed 1/2 cup crunchy peanut butter with 1/3 cup creamy tahini) 

  • 2-3 tbsp liquid sweetener 

Dark chocolate coating: 

  • 1 cup 70% organic dark chocolate (or dairy free carob) 

  • 1 tsp Coconut oil 

  • 1 tbsp liquid sweetener  

 

Directions: 

STEP 1: Press bottom layer down into a 4x4 deep square baking dish. Make sure it is flat use a rolling pin or back of a rubber scraper. 

Freeze while you prepare the second and third layer. 

STEP 2: Mix the second peanut butter layer well, then set aside 

STEP 3: In a separate microwave safe bowl melt your chocolate and coconut oil (about 1-2 min stirring every 35-40 seconds). 

STEP 4: Pour the PB layer over the butter cookie layer. Then coat with chocolate layer. 

STEP 5: Freeze until solid (at least 1-2 hours). Then cut into squats or use a cookie cutter to shape patties! 

Best if kept frozen until ready to enjoy!
