MMP Pumpkin Corn Bread {Gluten Free}

Ingredients

  • 1.5 C GF organic Cornmeal

  • 1 C MMP Protein Pancake Mix

  • 1 C Almond Milk (less/more)

  • 1/2 C pumpkin puree

  • 1 Large Egg

  • 2 Tbsp Grassfed butter or coconut oil (melted)

  • 1/4-1/2 C honey or maple syrup (less/more depending on how sweet you like it)

  • 2 tbsp Coconut Sugar

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 2 tsp baking soda

  1. Mix dry ingredients

  2. Beat in the egg then the rest of the wet ingredients

  3. Mix until smoother batter forms but don't over mix

  4. Pour into a greased square pan and bake at 375 for about 20 minutes

Yields 10 squares at 115 calories each  3.2g F / 16g C / 5g P
